Strawberry Acai Bowl 2 The other day I was at the store when I noticed strawberries on sale for $0.99 / lb! I wasn't sure that was a feasible price for quality goods so I spent a solid five minutes searching for the fatal flaw in each pack. With no blemishes uncovered, I added a box to my cart and then another and another and another. I love strawberries and so does my little man, but when I got home and tried to neatly stack my treasures in the fridge, I realized that four pounds might have been on the slightly excessive side. Lucky for me, at that precise moment my stomach announced its immediate need for nourishment - and what comes together quicker than a smoothie or smoothie bowl (other than, of course, cereal or a breakfast bar?). A bunch of chopped strawberries and a couple of frozen Acai packs were the base for this delicious Strawberry Acai Bowl which silenced my talkative belly and lent me the brain power needed to accommodate the rest of the four pounds of strawberries in our tiny fridge / freezer. Let's just say we will be eating strawberries at every meal for the rest of the week. What is your favorite way to use an excess of strawberries. Feel free to share recipes and ideas! Strawberry Acai Bowl

  • Bowl
  • 2 frozen acai packets
  • 1 cup sliced frozen strawberries
  • 1/2 cup oats
  • 3/4 cup non-fat Greek yogurt
  • 1/2 cup light soymilk
  • 1 tablespoon unsweetened shredded coconut
  • 1 scoop chocolate whey protein powder
  • 1 tablespoon flax seed
  • Toppings
  • 2 tablespoons unsweetened shredded coconut
  • 1/3 cup granola
  • 1 banana, sliced

Place all of the "Bowl" ingredients in the blender and press the smoothie button. If your blender does not have this blender, blend until smooth

Distribute evenly between 3 chilled glasses or bowls.

Divide the toppings equally between the 3 servings.

Enoy!

PS: sometimes I like to drizzle a little local honey and / or chia seeds over the top of everything.
