Tuna Melt

Tuna Melt I firmly believe that food cravings are dictated as much by our mood and the weather as by our current attire. Today, for example, has been cool and cloudy. It's no east coast storm day, but I've had one of those bone chills you just can't shake all day. And, I've been in gym clothes hoping that I'll get in a workout before the day ends....

A Letter to Muffins

Cranberry Orange Muffin 1 Dear Muffins, I love you. I really do. Let me count the ways. I love that you're just sweet enough without sending my glucose levels into overdrive. I love the specks of fruit littered throughout your soft and airy dough. I love your slightly crunchy top and delicately soft bottom. I love that you taste fantastic with coffee or iced tea. I love the endless combinations that make you infinitely malleable to my mood and desire....

Slow Cooker Black Bean Soup

It is absolutely amazing to me just how much my slow cooker can do. For example, in a few hours time it can take a pile of veggies, spices, beans, and chicken stock (above) and turn it into scrumptious black bean soup (below). The only thing I have to do is be patient enough not to lift the lid mid-cook cycle....

Peach Rhubarb Smoothie

Peach Rhubarb Smoothie 3 In honor of Mother’s Day, this week's focus will be where it should: on all things mom. From the moment she wakes up to the second her head hits the pillow that night, she will be the main focus, the star of the show. Start mom's day off right with a delicious breakfast – the most important meal of the day. That said, might I suggest that you change up the breakfast-in-bed routine by ditching the cliché scrambled eggs and toast opting instead for lighter peach rhubarb smoothie? If your celebrations / family get-togethers are anything like mine, there will be food and drink in spades all day, so cut her some carb slack during this first meal. If you’re feeling especially generous and want to secure your “daughter / son / spouse of the year award” add a glass of champagne to that breakfast tray. You can thank me later. Hummus Love

Every Sunday morning we take a family trip to the local farmer’s market. I look forward to it all week (sometimes I even run there and let the hubby and boy meet me there – yay for a little exercise before indulging in everything the market has to offer! The only downside is that now I am shopping hungry. Good thing the hubby brought ALL the reusable bags!). Farmer’s markets have really evolved. They now sell clothing, jewelry, tamales, home made soaps, and even have petting zoos and pony rides! Our weakness, aside from all the fresh produce that I don’t need, but want, and promise the hubby I will find a delicious way to use before it spoils, is that Israeli stand that sells a billion hummus flavors, tziki, flatbread, and other delicious dips. We have managed, through much trial and error, to narrow down our weekly purchases to just the original hummus and the habanero hummus. They are DELICIOUS and very addicting – like, sit down to watch half a football game while the boy is sleeping and suddenly it is gone addicting. There went $10! What?! $10! It’s just pureed beans! Oh golly. ...

Spaghetti Squash

I am a warm-weather girl at heart. Heat? Love it! Humidity? No problem! I love spending all day by our bathwater-warm pool in one of those floaties that allows you to be part of the in-pool party without actually getting wet – and comes equipped with a cup holder for my water – or ice-cold adult beverage of choice a homemade margarita, beer, sangria! No pool? No problem! The lake is equally awesome! You know that song “Pontoon” by Little Big Town? It’s a country song. It’s fantastic. And, it’s my favorite. We don’t have a pontoon, but if we did, I would definitely reenact that song every weekend. (I know you’re dying to understand its fantastic-ness so just go iTunes and download it. You can thank me later). ...
